The recipe
33 g · 497 g water · 96 °C · 3.5 min
- Rinse the paper, tip the rinse through, and add 33 g at a medium-fine grind.
- Bloom with 72 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the mug.
- The heart is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the marshmallow with a pick.
- Finish with marshmallow.
