The recipe
103 g · 771 g cold water · 18 h · 1:7
- Grind 103 g coarse — the texture of raw sugar — and stir it into 771 g of cold water until no dry grounds are left floating.
- Leave it 18 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the cortado.
- Serve straight away, while the crema is still whole.
