Chapel Shift
Latte in a terracotta diner
A latte in a terracotta diner, #102 of 999. Morning light, concrete counter. Heart on the surface. Cinnamon. Kraft sleeve. Common, roast score 94.1.
The recipe
18 g · 37 g out · 165 ml whole milk · 62 °C
- Pull a double into the diner and have the jug ready before it finishes.
- Steam 165 ml of whole milk to 62 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and draw a heart through the crema.
- Grate cinnamon over the top — a rasp, not a shaker.
