The recipe
31 g · 516 g water · 98 °C · 3.6 min
- Rinse the paper, discard the rinse water, and add 31 g at a medium grind.
- Bloom with 70 g of 98 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the mason.
- Serve straight away, while the crema is still whole.
