The recipe
18.5 g · 19 g chocolate · 157 ml milk
- Melt 19 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 157 ml of milk to 62 °C.
- Pour through the chocolate so it marbles on the way in.
- Pour from height to sink the foam, then drop the jug to the surface and draw a chevron through the crema.
- Dust cocoa over a stencil held a finger above the surface.
