The recipe
6 g masala · 131 ml water · 135 ml milk · 6 min
- Crack the whole spices — clove, star anise, cardamom — and simmer them in water for 6 minutes before the tea goes anywhere near it.
- Add the leaf and 135 ml of milk, and bring it up to the rise three times without letting it boil over.
- Strain into the bowl. Sweeten in the pan, not at the table.
- Serve straight away, while the crema is still whole.
