The recipe
18.7 g · 22 g chocolate · 162 ml milk
- Melt 22 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 162 ml of milk to 62 °C.
- Pour through the chocolate so it marbles on the way in.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Dust cocoa over a stencil held a finger above the surface.
