Linen Berth
Latte in a bone tulip
A latte in a bone tulip, #136 of 999. Roastery light, concrete counter. Wave on the surface. Cinnamon. Kraft sleeve. Common, roast score 115.1.
The recipe
18.2 g · 34 g out · 120 ml whole milk · 63 °C
- Pull a double into the tulip and have the jug ready before it finishes.
- Steam 120 ml of whole milk to 62 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and walk a wave through the crema.
- Grate cinnamon over the top — a rasp, not a shaker.
