The recipe

7 g masala · 136 ml water · 135 ml milk · 5 min

Crack the whole spices — clove, star anise, cardamom — and simmer them in water for 5 minutes before the tea goes anywhere near it.
Add the leaf and 135 ml of milk, and bring it up to the rise three times without letting it boil over.
Strain into the mason. Sweeten in the pan, not at the table.
Pour from height to sink the foam, then drop the jug to the surface and walk a leaf through the crema.
Build the foam a centimetre above the rim and let it set for a moment before it travels.
