The recipe
33 g · 463 g water · 94 °C · 4.5 min
- Rinse the paper, tip the rinse through, and add 33 g at a medium grind.
- Bloom with 66 g of 94 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the mason.
- Serve straight away, while the crema is still whole.
