- Pull a double into the mug.
- Steam 131 ml to 60 °C with more air than a latte — you are after a third of foam, and it should hold a spoon.
- Pour so the foam lands last and sits a centimetre deep.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a feather through the crema.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
