The recipe
28 g · 463 g water · 98 °C · 4.1 min
- Rinse the paper, discard the rinse water, and add 28 g at a medium-fine grind.
- Bloom with 55 g of 98 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the beaker.
- The tulip is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the foam with a pick.
