The recipe

- Pull a double into the tumbler.
- Steam 129 ml to 61 °C with more air than a latte — you are after a third of foam, and it should hold a spoon.
- Pour so the foam lands last and sits a centimetre deep.
- Pour from height to sink the foam, then drop the jug to the surface and walk a ring through the crema.
- Grate cinnamon over the top — a rasp, not a shaker.
