The recipe
5 g masala · 130 ml water · 107 ml milk · 4 min
- Crack the whole spices — clove, star anise, cardamom — and simmer them in water for 4 minutes before the tea goes anywhere near it.
- Add the leaf and 107 ml of milk, and bring it up to the rise three times without letting it boil over.
- Strain into the goblet. Sweeten in the pan, not at the table.
- Pour from height to sink the foam, then drop the jug to the surface and draw a spiral through the crema.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
