The recipe

17.8 g · 30 g ristretto · 130 ml milk

Pull a ristretto — stop it short, around thirty grams, so it stays sweet under the milk.
Steam 130 ml to 60 °C with barely any air. The texture you want is paint, not foam.
Pour close to the surface from the start. A flat white is mostly the pour.
Pour from height to sink the foam, then drop the jug to the surface and draw a dots through the crema.
