The recipe
18.5 g · 36 g out · 107 ml milk · 1:1:1
- Pull a double into the mug.
- Steam 107 ml to 61 °C with more air than a latte — you are after a third of foam, and it should hold a spoon.
- Pour so the foam lands last and sits a centimetre deep.
- Pour from height to sink the foam, then drop the jug to the surface and walk a bloom through the crema.
- Dust cocoa over a stencil held a finger above the surface.
