The recipe
17.7 g · 36 g out · 197 ml whole milk · 66 °C
- Pull a double into the diner and have the jug ready before it finishes.
- Steam 197 ml of whole milk to 61 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and walk a bloom through the crema.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
