The recipe
32 g · 524 g water · 95 °C · 4 min
- Rinse the paper, tip the rinse through, and add 32 g at a medium-fine grind.
- Bloom with 59 g of 95 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the bowl.
- The clover is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the whip with a pick.
- Whip to soft peaks, no further, and spoon it on in one movement.
