The recipe

- Steam a small jug to 60 °C — warm, not hot, and flat.
- Cut the shot with the same volume again. It should be one colour all the way down.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Float the cream over the back of a spoon so it sits as a layer rather than folding in.
