The recipe

17.2 g · 22 g chocolate · 151 ml milk

Melt 22 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
Steam 151 ml of milk to 61 °C.
Pour through the chocolate so it marbles on the way in.
Pour from height to sink the foam, then drop the jug to the surface and walk a rosetta through the crema.
Finish with gold leaf.
