The recipe
32 g · 488 g water · 98 °C · 3.6 min
- Rinse the paper, discard the rinse water, and add 32 g at a medium-fine grind.
- Bloom with 66 g of 98 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the thermos.
- Whip to soft peaks, no further, and spoon it on in one movement.
