The recipe

- Grind 91 g coarse — the texture of raw sugar — and stir it into 858 g of cold water until no dry grounds are left floating.
- Leave it 13 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the mug.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
