The recipe
29 g · 536 g water · 98 °C · 4 min
- Rinse the paper, discard the rinse water, and add 29 g at a medium grind.
- Bloom with 51 g of 98 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the paper.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Dust cocoa over a stencil held a finger above the surface.
