The recipe
17.5 g · 27 g ristretto · 120 ml milk
- Pull a ristretto — stop it short, around thirty grams, so it stays sweet under the milk.
- Steam 120 ml to 59 °C with barely any air. The texture you want is paint, not foam.
- Pour close to the surface from the start. A flat white is mostly the pour.
- Pour from height to sink the foam, then drop the jug to the surface and draw a clover through the crema.
