The recipe
32 g · 482 g water · 97 °C · 3.7 min
- Rinse the paper, tip the rinse through, and add 32 g at a medium grind.
- Bloom with 68 g of 97 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the tulip.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Dust cocoa over a stencil held a finger above the surface.
