- Pull a double into the mug and have the jug ready before it finishes.
- Steam 192 ml of whole milk to 66 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and draw a feather through the crema.
- Rest a sugar cube on the saucer. It is for the drinker to decide, not the barista.
