The recipe

- Pull a double straight into the bowl.
- Steam a small jug to 57 °C — warm, not hot, and flat.
- Cut the shot with the same volume again. It should be one colour all the way down.
- Pour from height to sink the foam, then drop the jug to the surface and draw a heart through the crema.
- Whip to soft peaks, no further, and spoon it on in one movement.
