The recipe
18.6 g · 36 g out · 120 ml whole milk · 65 °C
- Pull a double into the tulip and have the jug ready before it finishes.
- Steam 120 ml of whole milk to 65 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and draw a heart through the crema.
- Whip to soft peaks, no further, and spoon it on in one movement.
