The recipe
31 g · 502 g water · 96 °C · 4 min
- Rinse the paper, tip the rinse through, and add 31 g at a medium-fine grind.
- Bloom with 59 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the cortado.
- The sunburst is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cocoa dust with a pick.
- Dust cocoa over a stencil held a finger above the surface.
