The recipe
18.5 g · 23 g chocolate · 132 ml milk
- Melt 23 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 132 ml of milk to 64 °C.
- Pour through the chocolate so it marbles on the way in.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
