The recipe
2.3 g matcha · 69 ml · 78 °C · whisk 18 s
- Sift 2.3 g of matcha into the bowl. Unsifted it clumps and no amount of whisking fixes it.
- Add 69 ml at 78 °C — boiling water makes it bitter — and whisk in a W, wrist only, until the surface is all fine foam.
- Pour into the tumbler straight away; it separates within a minute.
- Grate cinnamon over the top — a rasp, not a shaker.
