The recipe
18.7 g · 18 g chocolate · 147 ml milk
- Melt 18 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 147 ml of milk to 64 °C.
- Pour through the chocolate so it marbles on the way in.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a dots through the crema.
- Whip to soft peaks, no further, and spoon it on in one movement.
