The recipe

- Rinse the paper, tip the rinse through, and add 33 g at a medium grind.
- Bloom with 60 g of 97 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the mug.
- The ring is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the gold leaf with a pick.
- Finish with gold leaf.
