The recipe
28 g · 485 g water · 96 °C · 4.1 min
- Rinse the paper, discard the rinse water, and add 28 g at a medium grind.
- Bloom with 50 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the tumbler.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
