The recipe
29 g · 537 g water · 95 °C · 4.4 min
- Rinse the paper, discard the rinse water, and add 29 g at a medium-fine grind.
- Bloom with 55 g of 95 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the mug.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
