The recipe
95 g · 850 g cold water · 17 h · 1:9
- Grind 95 g coarse — the texture of raw sugar — and stir it into 850 g of cold water until no dry grounds are left floating.
- Leave it 17 hours in the fridge. Longer is not stronger past a day, only heavier.
- Strain twice, the second time through paper, and serve over ice in the diner.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
