The recipe
18.1 g · 21 g chocolate · 134 ml milk
- Melt 21 g of dark chocolate into the shot while it is still hot, and stir until it is glossy rather than grainy.
- Steam 134 ml of milk to 61 °C.
- Pour through the chocolate so it marbles on the way in.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Dust cocoa over a stencil held a finger above the surface.
