The recipe
32 g · 524 g water · 96 °C · 4.2 min
- Rinse the paper, tip the rinse through, and add 32 g at a medium grind.
- Bloom with 62 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the tumbler.
- The leaf is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cocoa bean with a pick.
- Finish with cocoa bean.
