The recipe

- Steam 178 ml of whole milk to 60 °C: air for the first two seconds only, then drop the tip under and spin it until the jug is too hot to hold.
- Knock the jug, swirl until it shines, and pour.
- Pour from height to sink the foam, then drop the jug to the surface and wiggle a chevron through the crema.
