- Rinse the paper, discard the rinse water, and add 31 g at a medium grind.
- Bloom with 61 g of 95 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the demitasse.
- Grate cinnamon over the top — a rasp, not a shaker.
