- Grind 17.5 g fine enough that the first drops take five seconds to appear, and distribute before you tamp.
- Pull to 34 g in 27 seconds. If it runs fast it will taste thin and sour; if it chokes, coarsen by a hair and pull again.
- Serve in the paper without waiting.
- Spoon the foam on last so it sits proud of the rim rather than folding in.
- Build the foam a centimetre above the rim and let it set for a moment before it travels.
