The recipe
32 g · 521 g water · 96 °C · 4.3 min
- Rinse the paper, discard the rinse water, and add 32 g at a medium grind.
- Bloom with 65 g of 96 °C water for forty seconds, then pour the rest in two even circles.
- The bed should run dry at about four minutes. Swirl the carafe and pour into the thermos.
- The heart is set on at the pass, not poured — there is no steamed milk in this one, so it is drawn in the cinnamon with a pick.
- Grate cinnamon over the top — a rasp, not a shaker.
